The cuisine of Goa may be compartmentalized into local and global. Goan cuisine is a predominantly sea food cuisine comprising of prawn, crabs, squid, pomfret, lobsters etc. owing to its contiguous coastal belt. Fish curry and rice is the staple food in Goa. Goa being a culturally vibrant state has been influenced by Portuguese and Hindu cultures and their respective cuisines. Apart from Goan cuisine per se, guests also get a slice of world palate in the alternative cuisines like Italian food viz. pasta and the like that is picking up in goa. Oriental cuisines like Chinese and Thai food is also on the menu in Goa and a very popular order amongst people both local and global with most restaurants serving Chinese fried rice, noodles etc. Continental cuisine whose mainstay is its unique methods of cooking like baking, grilling, stuffing and sautéing of food items along with several herbs and spices is on offer in many popular restaurants in Goa. Several restaurants cater to the gastronomic delight of Indians as well as adventurous foreigners with quintessential Indian cuisine in the garb of Punjabi cuisine/north Indian cuisine like parathas, nan, roti tandoori etc. Mughai cuisine is a cuisine born out of the Persian and Turkic cuisines of central Asia and mainly comprises of kebabs, kofta , mughlai chicken etc. to name a few. The tastes and smells in goa are myriad enough to titillate the taste buds of one and all!!
